Pesto has gradually evolved from a pasta condiment to something a little more robust, and it now takes its place among the dips of local delis as a chunkier alternative for your crackers or crudites. Victoria Market deli Dianne’s Delights claim that their customers have named their home-made pesto “the best in Australia”, and those faithful shoppers aren’t far off the mark: Dianne’s pesto is chunky without becoming separated, with a perfect blend of flavours (basil, pine nuts, olive oil, a hint of parmesan). It’s just as home on a dip platter as it is plonked on top of spaghetti.
